Mommy Diaries

So, as you must know, I am growing a human. {shrugs shoulder} Its something I am good at. ;)
Anyway, I never thought in a million years that it would be harder to be pregnant the second time around! But it has been *hands down* waaaaaay harder this time than last time. {sigh} My nausea is slam-you-in-the-gut-lying-on-the-couch-all-day bad. But my body isn’t kind enough to let me be sick and feel better – no – I get to feel on the verge of yacking all day. I have had a constant headache since I found out I was with child that feels like little people with pick-axes are on the inside of my forehead just banging away to get out. I take extra strength Tylenol, but it doesn’t work well…it just dulls it.
So, needless to say, blogging, Twitter-ing, Facebook-ing, or being any type of social consumes far more energy and effort than I wish it did. I love blogging! I love catching up on Twitter with my creative pals! But right now, its just so hard! So, this post is to really write a disclaimer of sorts…I will keep blogging. That sort of is my commitment to myself. If I didn’t keep up with blogging and socializing, I think I would sink into a yucky pit. But, I will probably not be so social on the other networks. For whatever reason, “scrolling” down a webpage on my phone or computer makes me dizzy. Go figure.
I am still plugging away at the shop, still trying to stay caught up on everything, but I just am going to be giving myself a little break and some much needed rest. So if I don’t respond to a Tweet as quickly as I might have before, just say a quick prayer that I am not lying on the floor in the fetal position crying. ;)
On a brighter note…I made some yummy crackers yesterday that left my daughter saying, “Mooore cacker, Mommy???” I made Gluten Free Cheese Crackers, courtesy of Adventures of a Gluten Free Mom. They are super easy and oh so yummy! They taste exactly like the real cracker! :)
They are really simple and quick too, so go try them!!! :)
Ingredients:
4 oz Cheddar Cheese Shredded {and my suggestion is to also process it in a food processor to make the cheese extra fine)
4 tbsp butter
3/4 c cornstarch
1/4 tsp salt
1/4 tsp xanthan gum
1/2 tsp baking powder
2 tbsp milk
Topping: salt, dried herbs, etc. whatever you like!
Preheat oven 400°. Line baking sheet with parchment paper.
Combine all ingredients, except the milk, in a bowl. Mix until the mixture resembles a fine crumb. Add milk and beat well. On a lightly greased surface, roll the dough to 1/8″ thickness. Cut into 3/4 in squares (or cut into fishies if you have a small cutter). Prick the tops of the crackers with a fork and sprinkle lightly with your desired topping. Bake approximately 10 minutes or until crispy and golden on edges.
Voila! Yummmmy! :)
